If you want to change the order, name or even visibility of child table tabs then you would open the table preferences and switch to the Relationships Tab.
The first sub tab named "Order & Rename" allows you to change the order and the names of the child table tabs. To hide a tab you would switch to the appropriate [1-1, 1-M, M-M] tab and change the visibility from 'Tab' to 'Hidden'.
